Refreshingly light yet satisfying, this Chicken Soba Noodle Bowl combines tender B Strong sous vide chicken with crisp veggies and a tangy sesame-miso dressing—perfect for a wholesome meal!
Ingredients

- 180g soba noodles
- 250g B Strong Slow Cooked Chicken
- 180g Chinese cabbage, thinly sliced
- 1 carrot, julienned
- 1 Lebanese cucumber, julienned
- 3 spring onions, thinly sliced (plus extra for garnish)
- Roasted sesame seeds, to serve
Sesame-Miso Dressing:
- 2 tbsp shiro miso
- 2 tbsp grapeseed oil (or any mild-flavored oil)
- 1½ tbsp brown rice vinegar
- 1 tbsp tamari
- 1 tbsp finely grated ginger
- 2 tsp hulled tahini
- 2 tsp sesame oil
- 1 garlic clove, finely chopped
- Juice of ½ lemon (or to taste)
Instructions
- Cook the soba noodles: In a large saucepan of salted, simmering water, cook the soba noodles according to packet instructions (about 5-7 minutes). Drain and rinse under cold running water to cool and separate the noodles. Transfer to a large bowl.
- Prepare the salad: Add the pre-sous vide diced chicken, cabbage, carrot, cucumber, and spring onion to the noodles. Toss gently to combine.
- Make the dressing: In a bowl, whisk together the shiro miso, grapeseed oil, brown rice vinegar, tamari, grated ginger, tahini, sesame oil, garlic, and lemon juice. Thin with 1-2 tablespoons of hot water to achieve a drizzling consistency.
- Assemble: Drizzle the sesame-miso dressing over the salad, tossing gently to combine. Serve with roasted sesame seeds and extra spring onion for garnish.
