Step 1
Heat oil in large saucepan over medium heat.
Step 2
Add onion, carrot, and celery stalk. Cook for 10 minutes or until onion has softened.
Step 3
Add stock. Bring to the boil.
Step 4
Reduce heat to low and simmer, partially covered, for 20 minutes. Add protein.
Step 5
Chop reserved celery leaves. Stir into soup and serve.
